Boulder Corn Muffins

  1. Preheat oven to 200°C (400°F).
  2. Mix the dry ingredients together in a large bowl.
  3. Add Silk, oil and sugar or honey. Mix until thoroughly combined. Fold in corn.
  4. Lightly oil muffin tins and divide batter among them, filling each 3/4 full.
  5. Bake for 15-18 minutes.
  6. Serve hot.
