Thai Vegan Curry

Instructions

  1. In a medium bowl, toss the chickpeas with half the curry powder. Season with salt and pepper.
  2. In a large skillet, heat 1 tbsp. oil over medium heat. Cook onions for 3 to 5 minutes, until softened. Add garlic and ginger and mix well.
  3. Add the tomato paste and other half of the curry powder and stir well to form a paste.
  4. Add Silk® Unsweetened Coconut Beverage, chickpeas and vegetable broth, then stir.
  5. Add the peppers and snow peas.
  6. Turn heat to medium-high until gently boiling. Reduce heat and simmer for about 10 minutes.
  7. Serve over basmati rice and garnish with lime juice and fresh coriander.
