Creamy Cashew Mashed Potatoes

Instructions

  1. Peel and cube potatoes.
  2. Place in large pot and cover with water.
  3. Boil for about 20 minutes, until potatoes fall apart when poked with fork. Drain water.
  4. Add butter and salt. Mash with potato masher until butter is incorporated and potatoes are fairly smooth.
  5. Add Silk slowly, mixing until potatoes are fluffy.
