Instructions
- Prepare the pesto by adding all pesto ingredients into a food processor. Blend until the basil is very finely chopped and the pesto is mostly smooth. Set aside.
- Cook pasta in salted water according to the package instructions. Drain, return to the pot and lightly coat with olive oil. Set aside.
- Melt plant based butter in a large pot over medium heat.
- Add diced onion and cook until starting to caramelize, about 8-10 minutes.
- Sprinkle in flour, stir and cook until no white streaks remain.
- Increase the heat to medium-high and pour in Silk® NextmilkTM.
- Cook until the sauce starts to thicken, stirring constantly.
- Add Silk dairy-free Shredded cheese and stir until melted.
- Decrease the heat to low.
- Transfer the cooked pasta and the pesto into the pot with the mac and cheese sauce. Stir to coat. Taste and adjust salt and pepper levels if desired.
- Enjoy as is or garnished with homemade breadcrumbs and fresh basil.
