Non-Dairy Pesto Mac and Cheese

  1. Prepare the pesto by adding all pesto ingredients into a food processor. Blend until the basil is very finely chopped and the pesto is mostly smooth. Set aside.
  2. Cook pasta in salted water according to the package instructions. Drain, return to the pot and lightly coat with olive oil. Set aside.
  3. Melt plant based butter in a large pot over medium heat.
  4. Add diced onion and cook until starting to caramelize, about 8-10 minutes.
  5. Sprinkle in flour, stir and cook until no white streaks remain.
  6. Increase the heat to medium-high and pour in Silk® NextmilkTM.
  7. Cook until the sauce starts to thicken, stirring constantly.
  8. Add Silk dairy-free Shredded cheese and stir until melted.
  9. Decrease the heat to low.
  10. Transfer the cooked pasta and the pesto into the pot with the mac and cheese sauce. Stir to coat. Taste and adjust salt and pepper levels if desired.
  11. Enjoy as is or garnished with homemade breadcrumbs and fresh basil.
