Honey Zucchini Bread

  1. Preheat oven to 180°C (350°F).
  2. Spray or grease a 20x10 cm loaf pan.
  3. Whisk together flour, baking soda, baking powder, cinnamon and salt in a medium bowl.
  4. In a separate bowl, combine brown sugar, honey, melted margarine and Silk.
  5. Whisk in eggs and grated zucchini. Add flour mixture, stirring to combine.
  6. Fold in Kashi.
  7. Bake for 55-60 minutes until top springs back and a knife inserted in the center of bread comes out clean.
  8. Cool for 15 minutes and brush with glaze.
