Apple & Pear Overnight Oats

Instructions

  1. Mix the apple, pear, oats and Silk oat original unsweetened beverage together in a medium mixing bowl, then stir in half of the almond butter. Add the pinch of salt, cover with cling film and store in the fridge overnight (about 12 hours).
  2. For the compote, put the apple and pear into a small saucepan with 2 tbsp of water, put a lid on the pan and cook for 5 minutes. Add the maple syrup and spice, stir gently then cover and simmer on a medium heat for 10 minutes until the fruit has softened and broken down a little. Set aside, cool and cover until morning.
  3. To serve spoon the oats into bowls and top with a spoonful of Silk plain oat yogurt style, the compote and drizzle over the remaining almond butter.
