Poor Man’s Pudding with Blueberries

  1. Preheat oven at 180°C (350°F).
  2. Butter or spray a 2-litre Pyrex bread pan.
  3. Combine water, maple syrup and brown sugar in a saucepan.
  4. Bring to a boil, reduce heat and let simmer for 10 minutes, until sauce has slightly reduced.
  5. Set aside.
  1. In a large bowl, cream margarine and sugar.
  2. Add egg and vanilla and whisk until smooth.
  3. Add flour, baking powder and Silk, stirring just to combine. Do not over mix.
  4. Gently stir in blueberries.
  1. Pour mixture into prepared pan.
  2. Pour sauce over the dough.
  3. Note: It is normal for the liquid to remain on top of the dough prior to final baking.
  4. Bake for approximately 35 minutes.
