Total time 40mins
- Cut the veggies in equal chunks.
- Heat oil in a pan and fry onion, garlic, ginger and chili, add the spices and cook for 1-2 minutes. Add all the veggies (except the spinach), tomato passata and water. Let simmer for 20-30 minutes at low heat until the potatoes are soft. Add the spinach and almond alternative for 2 more minutes.
- Season with salt and lime juice.
